My stepmom introduced my family to these amazing bars several years ago and I had always wanted to get the recipe, but never had a reason to make them... until now. We had a cookout at our house and I had a box of Special K in the pantry. How convenient! These are to die for, definitely good if you need that sugar fix. Just a warning... these are not diet friendly!!! :)
Special K Bars
Family Recipe
Yield 24 bars
INGREDIENTS
1 cup Sugar
1 cup Light Corn Syrup
1 pinch Salt
1 tsp. Vanilla
1 cup Crunchy peanut butter
3/4 cup Chocolate chips
3/4 cup Butterscotch chips
6 cups Special K Cereal
DIRECTIONS
-Bring syrup, sugar, salt and vanilla to a boil.
-Remove from heat.
-Add peanut butter and cereal separately.
-Spread in greased 9 by 13 pan.
-Melt chocolate chips and butterscotch chips over low heat. Be sure to stir constantly so the chips don't burn.-Spread over the top.

Mmm, we make those too and everybody loves them! We sprinkle the chocolate and butterscotch chips on top and pop the whole pan in the oven for a few minutes, then swirl the softened chips with a knife to make the top all pretty :)
